Here is a list of my personal top earning crafting professions, in order, along with some raw data and explanations.
This is for crafting orders ONLY, not multicraft + auction house professions.

Explanations & Data

I’ll preface this with the following:
I have completed exactly zero crafting orders for Alchemy and Enchanting.
It should be obvious but I’ll mention it anyway - these two professions are basically auction house only. Do not pick these up expecting to craft Enchanted Crests every day. You’ll be lucky to get one order, and that’s after you eventually get the recipe.

Now, we’ll start with raw data and then go over each profession.

Total gold (30days / 30-60m playtime/day): 434044g, 86s, 90c

This was made with both public and personal crafting orders.

Here’s a table of the top items I’ve seen requested via trade chat over the last month, along with what profession creates the item and how many times I’ve seen it requested. This data is pulled directly from my CraftScan addon.

You’ll notice the Vagabonds Bounding Baton is top 3 - I personally did not have much luck with this. I saw 1 public crafting order for it, and I simply could not find a customer for it even though there were plenty of customers picked up by my addon.. could be simply a skill issue.

I did, however, have a LOT of luck with Jewelcrafting - the bulk of my gold came from this profession. I’ve been logged into my JC for the majority of the last 30 days. Again, keep in mind I am not crafting actual gems and selling them, I am simply completing crafting orders.

Most of my gold seems to be coming from the PVP community. The amount of PVP rings and necks I have crafted this week alone is obscene, and they tend to tip very generously.
My #1 customer over the last 30 days requested 2 PVP rings from me, tipping a whopping 20k.

If you take the PVE ring and neck into account too, you have a huge customer base with this profession alone. Jewelcrafting is the GOAT.

Tailoring & Blacksmithing come in tied for second place, with both having a huge customer base and a relatively easy entry point - cloaks for tailors and blades for blacksmiths.

For tailors

For blacksmiths, it will require 80 KP to easily craft all swords and warglaives, with an extra 25 KP on top to easily craft all knives, daggers and fist weapons. (Or vice versa)

Obviously, once you have gotten enough Artisan’s Acuity to be able to craft your blue tools, you’ll rarely have to ever use your concentration or finishing reagents.
